Soul Chocolate - Colombia 85% Dark Chocolate

This chocolate was carefully made by the beloved Toronto chocolate company Soul Chocolate. 

This chocolate isn't just any chocolate; it's got a rich history as deep as its flavor.

Back in 1820, a fella named Ricardo Guzmán Álvarez made the journey from Spain to Colombia with his two brothers. Landing in Gigante, Huila, they stumbled upon a plot of land with a bit of cacao already growing on it. Ricardo, being the visionary he was, decided to plant more, turning it into a thriving operation now known as Finca Casa Blanca (named after the farmhouse on the property).

Fast forward to today, and Casa Blanca is still going strong, managed by Ricardo's great-great grandson, Reynaldo Guzmán Romero. At 72 years young, Reynaldo's been tending to Casa Blanca for decades, making it the oldest and largest cacao farm in Huila. And get this – there are trees on the farm from the 1800s that are still producing to this day!

The cacao has a unique taste of dried cherries and chocolate pudding, and the finished chocolate has some acidity, but it is matched nicely with the sweetness of the chocolate itself.

These small batch, made-to-order chocolates intend to highlight the unique origins of cacao (sounds familiar, eh?) and have been ethically sourced by Katie & Kyle Wilson!
